Where do you begin? Potatoes are arguably the world’s most popular vegetable. They feature on the menu of the world’s best restaurants and your village tearoom. Nothing is more comforting than a baked potato oozing with butter and when you want to push the boat out how fabulous are Dauphinoise potatoes? Here is a small collection of recipes which highlight the special characteristics of our range of heritage potatoes.
This is adapted from a Michel Roux recipe and is an excellent dish to showcase the Mayan Gold. The colour is a vibrant gold and the taste is buttery-delicious.

This recipe uses a mix of varieties for a stunning effect. Wonderful with a glass or two of champagne to start a meal. The recipe makes about 8-10 portions, but you can scale it up and down depending on the side of your terrine tin.
