Keeping the skins on the coloured potatoes retains the colour better.

Generally speaking potatoes tend to fall into one of two categories; floury or waxy and it’s not apparent which category your potato falls into until it’s cooked.  Floury potatoes are sometimes referred to as ‘starchy’ potatoes. They have more dry matter and fluff up when they’re cooked, making them perfect for chips, roast potatoes or baking.

Waxy potatoes, on the other hand, have a higher water content and less starch so they retain their shape and have a firm bite, and are ideal for salads or simply boiled and dressed with butter.
